We picked the grapes by hand in small crates early in the morning in the cold to preserve the best possible aroma. The cider was pasteurized during bottling so that it did not ferment in the bottles and stayed fresh for a long time. The juice is not matured, filtered, or sulphured and no antioxidant is used in it. Bottled within 24 hours after collection, without the addition of sulfur dioxide. The cellar master recommends mixing the bottle and drinking it cloudy before opening. There may be tartar crystals in the bottom of the bottle, the juice is not chemically stabilized.

Distilled spirit from unsweetened grape skins of the aromatic variety Pálava. We harvested the Pálava grapes by hand, pressed them into wine, and then gently processed their peels carefully processed to this high-quality spirit.

According to the Act 307/2013 Coll. on compulsory labelling of alcohol, the company may use the following. Sonberk as a licensed seller of potable alcohol sells these spirits to final consumers.

The spiciness blends beautifully with the fruitiness, the finish is long, warm, with a fine mineral line, and infinitely long. A great companion for oriental cuisine.

Riesling 2021 Noble rot Semi-dry Riesling with a significant proportion of botrytis grapes. The third vintage in the history of Sonberg and again great. The colour is sparkling golden, the aroma is rich, wonderfully fruity with notes of ripe apricot, dried fruit and lime. The palate is robust, fruity, full of honey and dried fruit. The finish is long, concentrated and rich with a sweet, spicy aftertaste. A wine with the potential to age for at least 10 years.

The colour is 24 carat gold with straw edges, the aroma is intense, full of dried fruit, juicy ripe apricot, honey and flowers. Thanks to the large proportion of botrytis grapes, the flavour onset is powerful with a distinct honeyed touch, spiciness and a hint of sweet exotic fruit. A wine with higher residual sugar but with a strong and tangy acidity. This combination promises beautiful ageing, and the best is yet to come for this Riesling.

Under the branches of apricot and walnut trees, in close proximity to the almond and aspen trees, surrounded by the Sonberk vineyard, there are several colourful beehives. This is where the bees live, whose honey, prepared only by gentle grazing, is offered to you.

The only vinegar of its kind on the Czech market with hints of the aroma of balsamic vinegar. It is made by a traditional fermentation process from quality wine.

"The first Riesling from the beautiful Mitrberk vineyard in our Great Sonberk range. After 12 years of vine growth, this vineyard has given us beautiful grapes of high quality that begged to think about a new wine in our range. The wine developed very well from the first months in tank and appeared to be the best Riesling from our cellar. We were wondering how to accommodate this wine and decided to add a dry Riesling to the drier VOC Riesling, a dry Riesling with around 8 grams of residual sugar. This made the wine more robust, and gave it a wonderful fruitiness and fullness. For me, an interesting addition to our range that makes me very happy."

It is a unique wine of the 2021 vintage, which has been in our tank for a long time and all the time I have perceived its uniqueness. We thought for a long time whether to break the taboo that Sonberk does not make semi-sweet wines, especially Riesling out of conviction. However, Ipsus is truly exceptional and I think of it as a kind of child of mine. A characterful wine similar in style to the Mosel Spätlese Rieslings. Intense flavours, wonderful honeyedness and incredible potential for the future. The wine has polished beautifully and is ready to drink. However, I look forward to seeing it take on beautiful diesel notes and gain even more elegance and finesse."

This wine was born thanks to the people who cared for it with love.
