We process Pálava grapes entirely. Brandy made from them has just arrived

Pálava belongs to Sonberk. This is clear to anyone who has ever looked with a glass of wine of this variety from our terrace through the vineyard from which it arose, to the hills of the protected area of the same name. If you like to take a piece of the unforgettable view away from us in the form of wine, you can now try another way of Pálava processing. Pálavice, a grappa-type distillate that you won't otherwise meet much in Czech wineries, has just arrived in the cellar.

"Various grappas are made a lot in Tyrol or northern Italy, mainly from aromatic varieties. It is a nice addition to the wine assortment. We used to make even more of them; we also used grapes of Tramin and Moravian Muscat. Over time, however, it turned out that Pálava is best suited for schnapps," says our winemaker Olda Drápal.

Everyone can taste it. Sonberk´s Pálavice has a half-litre package, 42 percent alcohol, and you can order it through the e-shop.

Our first grape brandy was born in 2005 after Olda first experimented with it only at home. Now everything is precisely made up. Pálavice is made from the remnants of grapes after pressing, but there is still enough juice and sugar inside to ferment. The whole process is happening in our winery, the distilling itself is already in charge of experts in Dolní Dunajovice.

We are proud of our Pálavice, we produce it only in limited quantities, so you will not find it on sale anywhere other than at Sonberk and in our e-shop. This year we have more than three hundred
