We will would like to present a complete novelty, Riesling called Rudimentum. We have mentioned it few times already, but you can consider this a real introduction.

This wasn’t really planned. Actually, it's an experiment. But it's so good we made him a special bottle and he'll be selling in just a few places and on special occasions.

The story with Rudiment started at the end of 2013. There were more grapes so that no other pots than one last barrel were available at the end of the harvest, and when the last Riesling, come in, we had to put it in a 500-liter toasted barrel. "Every year I make a little experiment, and in this case we said that at this time we will enrich some other variety and do cuvée," said our winemaker Olda Drápal.

The original idea eventually did not happen, and this Riesling really does not matter without combining it with another variety. "We let the wine mature for two years with no unnecessary touches. Racking happened only using gravitation, no „cleaning“ or filtrating. Out of all the wines we make here at Sonberk, this one comes the closest the traditional, historical techniques.“ said Olda.

The unconventional process means that it results in an unconventional taste. In Rudimentum, you can not find typical riesling fruitiness. Here you can discover the taste of caramel, nuts and dried fruits instead and you will be charmed by very amber color.


"Someone will call it an orange wine, someone authentic, for me it’s Rudimentum," said Olda, who did not choose the name of the new sonberk specialty, and one of the possible translations of this Latin word means the beginning, which is a reference to the original wine-making process. The lucky ones who get to Rudiment will have a bottle of 0.75 liter in their hands with a simple tag and a the top sealed with a sealing wax. And how can they get to it? Either in some particular restaurants, sonberks closest partners, or at Sonberk itself. Just whisper the password „Rudimentum“ and our staff will get it for you.
