Sauvignon is no longer old-fashioned. Now lures its dandy version

In spite of all modern trends, we are rather conservative at Sonberk, and we are introducing significant changes gradually. One such change happened in our winery a few years ago. In 2016 we purchased a new grape press, and the technology of production of Sauvignon has changed quite a lot since then. Our winemaker Olda Drápal now calls this wine in a little ironically way „gigolo“, but the truth is that perhaps this change may have given us the award Collection of the Year from the creators of the Best Czech Wine Guide.

What exactly did the change entail? As a result, the flavor of Sauvignon shifted from a conservative version to a new, fruity, fresh, and expressive form. “The most famous wines of the Sauvignon variety come from France in the Loire region. They are dry, strict, smoky, sometimes matured in barrels. On the contrary, New World wines of this variety from New Zealand, Chile or South Africa tend to be very fragrant and fruity, with a peach or grass-herb tinge,” explains our sales director Dáša Fialová.

Thanks to the new press, Sonberk´s Sauvignon shifted to the New World variant. The pres is closed, not open as it used to be. “When the press is open, the primary aroma and fruitiness of Sauvignon are loosing during several hours of pressing. The must oxidizes. In a closed press, the aroma is not loosing and we also use nitrogen to ensure complete impermeability, so the juice flows beautifully fresh and fruity all the time,” Dáša explains. The result has the smell of gooseberry and elderberry, so many people are waiting for it every year in spring. You can buy the whole award-winning collection or just a bottle of Sauvignon vintage 2018 just separately. The 2019 edition will be back in spring.
